A junmai daiginjo brewed with our proprietary “Eight‑Stage Brewing” method—unique in Japan and worldwide.

To revive Sakai’s sake heritage, we reopened the city’s only brewery eight years ago after a 44‑year hiatus. Our original Eight‑Stage Brewing process creates a rich, sweet flavor—truly a nectar of the gods.

In standard sake brewing, the mash is built in three additions. We add five more stages on top of that, giving birth to our unique 'Hachidan‑Jikomi'.

During sake brewing, it is standard practice to add the koji, steamed rice, and water to the yeast starter in three separate portions— a technique called sandan-jikomi (“three-stage brewing”). At our brewery we push the method even further: by adding five additional stages we have created our own hachidan-jikomi (“eight-stage brewing”). This extended process keeps the yeast vigorous right to the end and delivers a luxuriously rich, sweet finish.

The result is a sake with rounded umami depth and an elegant sweetness that blooms on the palate, then slips away cleanly—true nectar. Take your time and enjoy the sweetness born from more than twice the effort of ordinary brewing.

With a brewing tradition that stretches back to the Edo period (1603-1863) , Sakai became one of Japan’s leading sake towns, standing shoulder to shoulder with Nada in Hyogo and Fushimi in Kyoto. By about 1900 the city hosted more than ninety-five breweries, and sake production remained Sakai’s dominant industry until the early 1920s, securing nationwide renown for its centuries-old craft.
